Professional Logo design with unlimited revisions

I need a high resolution professional logo designed for an ice cream business. The ice cream business will operate in both B2C and B2B arena so the logo will be fit for purpose for both business aspects.

I've got a few bits of artworks that I've put together to provide a mock up logo. Mine would serve as a baseline so ultimately the end product will be much better than what I've put together at the moment.

Bear in mind that the mock-up I have is low resolution. The intention is also to use this logo for some marketing material which means that I would preferably want this re-engineered to a high resolution such that when the logo gets blown up it doesn't get pixellated.

How soon can a mock up be put in place?
