Fixing problems with admin and product flat data with Magento and database

I have been having problems with re indexing product data, I have limited knowledge of the background of site and database and need problems fixing as soon as possible.
I have been having problems since I have taken over/bought the site from the original developer and cannot contact him for support. This has happened since I have deleted a lot of products from my site and things have been thrown out of place where they should be. I do have back up files and disks, but I don't want to upload them on my own as I am unsure what I am doing, I also need some one who can show me the site and who can fix this when this problem arrises again.
When I was being shown how to add and delete product ect. on take over, I have had some of the admin disabled from the Magento platform and want this returned.
