Shopify Tweaking in Minimal

To create multiple Sub Collections with an images and basic text for each, that opens a new list/page of products (e.g. Collection page is Ladies wear with a grid list of other collections such as Skirts, Trousers, Jumpers etc.) in the Minimal theme. This needs to be open for me to create more in the future by duplication. I have already started to create the sub categories as nests in the main nav area.
