Takings Comparison Spreadsheet

I am looking for somebody to design a spreadsheet which allows us to do the following:

Sales
Sales against previous year
Sales against target (a target entered)
Total Covers (number of customers) against previous years
Average Spend (sales/spend)
Average Spend against previous years, % increase or decrease


And also, overall for a defined period...

Our financial year runs in line with the calendar year.

Alongside a data input page with formulas it should also include an analysis sheet with graphs, and the ability to break down figures by trading periods. We trade four days per week - Thursday, Friday, Saturday and Sunday so would need additional breakdown available by day - so for example all Thursdays for a defined date period.

We have one year of comparative data available - 2019, but would need come the next year end to be able to add an additional year.
