Need to create the initial Artworks and then final Hi-Res. Press Ready PDF's

Have a request for creating Artwork Files for Press Ready PDF’s, detailed as under:
To create Artworks in Two Colours Black + Pantone Spot Green
for 8pp. A5 Portrait Booklets – Have only a previously printed copy;
so to scan in the Images from the Printed Copy, might have to re-type the
Text and then create the Artworks.
Attached are the two scanned pages to give an idea.
Can post the Printed copy once Customer has ordered the Booklets.
