Adobe Captivate - E-learning Project Improvements

I need assistance in polishing an Adobe Captivate project, primarily with a review and understanding of the following:

1) How to add closed captioning to video content
2) How to "lock" the progress (no fast forward or clicking next) to a video until it completes (so it "forces" the user to watch it)
3) Adjust and improve a "drag and drop" interaction so it works properly (Allows you to drag / drop any of the items, multiple tries until it's correct, etc)

I'd suspect any Adobe Captivate expert would be able to fix these items in under an hour. We already have a full template ready
