Realistic 3D character made out of photos references

The company I work for sponsors a couple of professional poker players. We want to create 3D models of them. We are looking to use them across our websites and promotional graphics, maybe even animate them at some point too (I would handle that once I get the models ready.)
The standard we are looking for is shown on the attached image (realistic game style, but fully clothed so no need to model detailed body musculature). We are not looking for sculptures, but a retopologized, animation friendly model with textures supplied.
