Sort out my chaotic personal taxes record keeping - spreadsheet etc (UK/Europe)

Hello,

I'm not the best at accounting (I don't have a clue) and as of 2018 I moved country, so since 2018 onwards I need to maintain great record for my personal tax return as I want to get a mortgage, I started using a spreadsheet I made to keep track of my "2018 Income & Expenditure" however I'm not sure if I'm doing it right as I'm dealing with multiple currencies and it's likely I missed things out.

I need someone to

* Create a spreadsheet which is manageable and allows for an idiot like me to add expenditures and incomes too it, I'm also open to software if it's easy.
* Go through my statements and make sure I haven't missed anything, and input it into this spreadsheet/software.
* Go through any relevant online payment solutions such as Coinbase or PayPal.
* The spreadsheet should give a breakdown of Income, Expenditure by Category and Tax Liability Incoming.
* Identify anything I may be missing
* Input everything from the bank statements that is self-assessment related income or expenses.

Problems

* My income is spread over numerous currencies.
* I receive payments online in crypto which are extremely volatile.
* The spreadsheet I made looks like a 5 year old made it.
* It's chaos
* You may have to get me to clarify what is non-relevant such as me ordering something online

Summary:

In short I need someone to organise all of my 2018 transactions into a system/spreadsheet or software which I can easily add to and maintain from that point onwards.
