Plan a trip around India

I'd like someone to prepare a suggested travel itinerary to India for me. My dates are flexible, but I would like to go there mid January and return up to 30 days later, in order to meet the max number of days for a tourist e-visa. Alternatively, we can plan a six week trip (but of course, the visa is more complex - if you think it's worth it, then I'll do it!).

I want a nice mix of interesting towns, cities, places of interest, places recommended for great food, great experiences, staying in each place for as long as think necessary. I will happily fly in and out of any international airport. Happy to take internal flights once or twice if necessary, but would like most of my travel to be trains or buses. Which means your itinerary would need to be workable - the places need to be in the right order :)
