Open source bldc firmware known as VESC with GUI tools and tutorials based around stm32F mcu is the base for writing an algorithm that set current levels at specific rpm points and requires simulating bike rider pedal input through identifying a current drop frequency that is parallel to the sinus of pedal strokes. This is only used to establish the existence of a cadence- not the level of input- it is basically a go/no go signal. Hardware and programming tools exist. Google VESC and there is a lot to available for gaining familiarity.
