Produce 2-3 min highlights video from 110 mins of continuous GoPro footage

Estimated project duration: less than 1 week
I have 110 minutes of video footage (taken on a GoPro camera and split into 6 consecutive video files) from which I need a 2-3 minute 'highlights' video producing.
The footage is from a near-space balloon launch (a school project) and the finished result will need to look something like a cross between this: https://www.youtube.com/watch?v=z9vE-M8fRhQ and this: https://www.youtube.com/watch?v=5vhJGZWWVEU
Note that the first example above contains footage very similar to ours. The second example includes footage of children watching the video we do not have (our footage is from the GoPro camera in the balloon only) however it does include text captions at key points within the video which is similar to what we're looking for.
The final video will need:
1. An on-screen title at the beginning (we will supply the text)
2. To include footage from 3 specific segments of the video: launch, burst and landing. We will supply the file names and time references for these, however it will be the job of the editor to select the remaining highlights to be included in the final video from the raw files.
3. Text captions at key points during the video. (We will supply the text for these, and guidance as to the approximate points within the raw footage that each caption relates to).
4. Royalty free background music (to be supplied by the editor, we would like to approve this first) however for the launch, bust and landing segments (see point 2 above) it would be good to have some background sound from the video incorporated too if this works artistically.
> A closing message at the end (we will supply the text and a logo which must be included).
The raw video files at MP4 format and were filmed at 720p & 60fps. Due to the large size of these files (4GB to 18GB each) if transfer via the PPH site isn't possible, then we anticipate using Wetransfer. Happy to consider other transfer methods if there is no additional cost.
I require the final video as a downloadable file, in a format suitable for upload to YouTube, in the highest definition possible based on the raw files provided.
