Wordpress cron job setup on WPEngine hosted ecommerce site

Description of requirements/features: Our client's site has 10,000 products which need to be exported occasionally for updating. Their hosting provider, WPEngine, times out database queries at 60 seconds, so traditional "export" plugins are not working. Right now we have "WooCommerce Store Exporter Deluxe" (https://www.visser.com.au/plugins/store-exporter-deluxe/) installed and configured, which offers a CRON job option. We need an on-demand CRON job setup that will export all product data incrementally (e.g. in batches of 100), rather than all at once, so that the server is not overloaded. Then the CSV is emailed to our client. It doesn't seem like it would be that hard if you know what you are doing, it is just a little over my head.
