Amend the design of an access database that holds staff details

We have 2 nursing homes in derby employing approx 110 people. I have put together a simple access database to record their details - start date, references details, crb details, qualifications etc. This is recorded in a single table with a form for data input and queries and reports to get the data out. This has been used for about 6 years now.
We then added details of the uniforms the staff had and then basic details about the courses the staff went on. This was in separate tables with updated forms and queries.
We now need to modify the design to allow a more flexible approach to the type of courses the staff need to go on, who needs to attend, and how frequently they need to attend. We need some input forms and several reports, and my access knowledge is out of steam.
I'm looking for someone to have a look at the database, see if this is possible and quote for doing some updates to it, preferably keeping it simple so that I can still tinker if necessary. It is written in access 2000 because that is all I have got and don't really want to upgrade it.
If that goes well, perhaps it might be worth having a look at what the database does and see if the rest needs updating / tidying.
