Instagram/Twitter strategy, help with content and story designs

I work for a PR and talent management firm based in Manchester and we are looking to up our social media game, and I wondered if you any freelancers out there can help.
I'll tell you a little bit about what we do. We are a team of journalists who on a day-to-day basis write stories for our business clients (who range from plastic surgeons, to food intolerance testing firms, to cleaning companies) in local, regional and national media. Our stories appear on the Daily Mail website and the like, and we're different from other PR firms in that we send out fully-formed, interesting stories rather than boring press releases.
Then we have our talent side - we manage reality stars and actors/actresses - mainly from the soap world including Coronation Street.
I'm looking for someone who can either help me look after our Twitter and Instagram or do the content for it each day/week, as while I'm good on both I'm not a professional, and I don't know exactly what I should be posting and when and how to make the most of the content we have, or make fancy stories/highlights.
It's been difficult for me to illustrate the achievements we get on the national newspaper websites for example on our Instagram. Because the coverage is online, we don't have nice PDFs of the pages, so other than screenshotting part of the article which is often about 3 sentences and includes the adverts and pictures on the page - I don't know how to show people on Instagram what we do business-wise. Because I want to be able to post this not just put it on a story. It's been easier to do the talent stuff on there but even still I'd like to jazz this up.
I want to create different highlights - at the moment I've done a 'what we do one' but I'd like one for talent, one for events, one for behind the scenes stuff, and so on. But I'd like to know how to create jazzy stories or want to see if you could do this for us on a long-term basis.
The content we have ranges from behind the scenes stuff from photoshoots, to videos of company launches, to stars working with brands and modelling their products, to our clients being mentioned on news websites, and so much more. Off the back of all of this I would also like to grow our Instagram followers, and Twitter but mainly Instagram.
Hopefully this gives you an idea of what I'm looking for, anyone please let me know if you think you could help and we can discuss further and I can show you our current Twitter and Instagram pages. Price per hour depends on experience/what you can offer. Thank you
