Data extraction into Excel

I've got 8 documents with approximately 70 to 80 entries in each that I need extracting to an Excel workbook. The entries are in a pdf format but you cannot cut and paste as the data is within pictures. There are a maximum of 8 fields in each entry and I need a worksheet for each document. In total approximately 4,800 fields to fill in.

Delivery is not urgent but accuracy is important.
